Woodfired Garlic White Queso Dip

This Woodfired Garlic White Queso Dip has the flavor built in, not added on top, not rescued by condiments on the side.

Flavor built in rather than rescued by condiments, the approach across our game day recipes.

Most queso dips lean on the chips to do the work. This one starts differently: Kinder’s Woodfired Garlic Rub goes straight into the base while the cheese is still molten and absorbing. Toasted garlic, a touch of smoke, low sustained heat. White American and mozzarella melt smooth around it and hold that flavor through the whole bowl, no hot-sauce rescue needed.

The toppings work the contrast: fresh jalapeños, diced roma tomatoes, chopped cilantro. Half the jalapeños go into the simmer so the heat rounds out and mellows. The rest go on top right before serving, sharp, green, present.

Stovetop, start to finish in 15 minutes. Heat your half and half, build in the cheese, stir until silky, add the rub and jalapeños, simmer low. That’s it.

Two things keep it from breaking: low heat and constant stirring. Push the burner too high and the fat separates out, grainy, greasy, done. Keep it at a lazy simmer and it stays glossy from the first chip to the last scrape.

Set it out at game day, on a cookout table, or on a weeknight when you want something that delivers without fuss. It earns the question every time: what’s in this? The answer is the rub.

Flavor First.

  • 2 jalapenos, diced finely

Method

  1. Heat half and half over medium heat in a medium saucepan for 2-3 minutes. Reduce the heat to a low simmer.
  2. Stir in cheeses starting with the american cheese first. Continuously stir the cheeses to ensure no sticking on the bottom of the pan.

  4. Top with the rest of jalapenos, cilantro and tomatoes. Serve with chips and enjoy!

Notes

  • Chop the white American small — Half-inch pieces or smaller melt faster and more evenly. Large chunks take longer and leave you chasing lumps at the end.
  • Warm the half and half before the cheese goes in — Starting with warm liquid means the cheese meets something already at temperature. Two to three minutes over medium is all it needs.
  • Stir the rub into the base, not onto the top — Working Kinder’s Woodfired Garlic Rub into the molten cheese during the simmer lets the smoky garlic infuse the whole dip. A surface dusting doesn’t do the same thing.
  • Low heat is the rule — Once the cheese is melted, drop to the lowest setting your burner has and don’t move it back up. High heat breaks the emulsion and the dip turns grainy and greasy.
  • Split the jalapeños — Half in during the simmer so the heat opens up and rounds out. Half on top fresh so there’s still a sharp, green bite in every scoop.
  • Rescue it if it thickens — If the dip tightens up while it’s sitting out, a splash of half and half over low heat and 30 seconds of stirring brings it back smooth.
Serving Suggestions
  • Tortilla chips are the call. Go thick-cut restaurant-style — they hold up under a full scoop without folding. Thin chips work, but you’ll lose some to the dip’s weight.
  • Pita chips and raw vegetables hold up just as well and cut through the richness differently. Bell pepper strips, cucumber rounds, even blanched broccoli — the cool crunch against the warm queso is worth setting out alongside the chips.
  • For a loaded version, stir in cooked crumbled chorizo right before serving. The smoky garlic rub in the base plays directly off the chorizo’s fat and spice. Shredded rotisserie chicken works if you want more protein with less heat. A cold margarita or a Mexican lager belongs on this table.
Storage & Reheating
  • Transfer leftovers to an airtight container and refrigerate for up to two days. The dip firms up considerably as it cools — that’s normal.
  • To reheat, put it back in a saucepan over low heat with a splash of half and half or whole milk. Stir constantly until it loosens back to a smooth, pourable consistency. Don’t push the heat — same rules apply as the first cook.
  • Microwave works in a pinch: low power, 30-second intervals, stir between each one. It won’t be quite as silky as stovetop, but it holds together.

Frequently Asked Questions

What makes this different from regular queso dip?

Kinder’s Woodfired Garlic Rub gets stirred into the molten cheese during the simmer, not used as a topping. That smoky, toasted-garlic flavor infuses the whole dip instead of sitting on the surface. That’s the difference.

Why did my queso turn gritty or greasy?

Heat. When the temperature climbs too high, the fat separates out and the proteins seize, that’s the grainy texture. Keep it at a low simmer once the cheese is melted and you won’t have this problem.

Can I substitute a different cheese for white American?

White American is the workhorse here, it melts smooth and holds the emulsion. Monterey Jack or white cheddar work in a pinch but tend to break more easily under heat. If you sub out the American, keep the temperature lower than you think you need to.

Can I make this queso ahead of time?

Yes. Make it up to a day ahead and store it covered in the refrigerator. Reheat gently over low heat with a splash of cream or half and half, stirring until smooth. Takes about three to four minutes.

How spicy is this dip?

Moderate. Two finely diced jalapeños spread across the whole batch gives a warm, present heat, not sharp or intense. Remove the seeds before dicing to dial it back, or add a third jalapeño if you want more.

Can I keep this warm in a slow cooker during a party?

Yes. Once it’s made on the stovetop, transfer it to a slow cooker on the warm setting. Stir every 20 to 30 minutes and add a splash of cream if it starts to thicken.
