Toasted Onion Potato Salad with Kinder’s Onion Dips & Seasoning Mix

Most potato salads show up to the cookout and get ignored. They’re there because someone had to bring a side. This one gets gone.

The cookout side that actually gets finished, and a quiet staple of our game day recipes.

Kinder’s Onion Dips & Seasoning Mix is what separates this toasted onion potato salad from the forgettable versions. That deep, slow-roasted onion flavor, the same profile you know from a good French onion dip, gets folded straight into the creamy dressing and coats every piece of potato evenly. No extra aromatics to prep, no long cooking time to develop flavor. One packet, even coverage, every bite.

The build is clean and intentional: Russet potatoes cooked until fork-tender, hard-boiled eggs, finely diced celery and yellow onion, mayo, yellow mustard. Each ingredient earns its spot. The eggs add body and richness. The celery delivers crunch and a sharp, clean bite. The mustard brings just enough edge to cut through the mayo without announcing itself. Fold the cooled potatoes in and the dressing wraps every piece.

Two details separate a good potato salad from a great one. Salt the cooking water, three tablespoons is the right call, not aggressive. That’s how you season the potatoes from the inside, which no amount of surface dressing can replicate. And never dress hot potatoes. Let them reach room temperature first or the dressing turns greasy and the texture falls apart. Cool potatoes, tight dressing, correct seasoning.

This recipe is ready in 35 minutes and serves four. It holds in the refrigerator for up to four days, so it travels well to any cookout, game day spread, or Sunday meal prep session. Chill it for at least 30 minutes before serving, the Kinder’s seasoning blooms through the dressing as it sits and the flavor tightens up. Make it a few hours ahead when you can.

Flavor First.

Notes

  • Salt the cooking water — Three tablespoons in a large pot is not too much. This is your only chance to season the potatoes from the inside; surface-level seasoning added after the fact can’t replicate it.
  • Cool completely before dressing — Hot potatoes break a mayo-based dressing into a greasy, separated mess. Room temperature is the target — not warm, not fridge-cold.
  • Chill before serving — The Kinder’s seasoning blooms through the dressing as it sits. Thirty minutes is the minimum; an hour is better if you have the time.
  • Fold, don’t stir — Once the potatoes go in, fold gently. Aggressive stirring breaks the potato pieces and turns the texture pasty.
  • Russets for creaminess, waxy potatoes for structure — Russets absorb the dressing and soften at the edges for a creamy salad. If you want firmer, distinct pieces, swap to Yukon Gold or red potatoes instead.
Serving Suggestions
  • This potato salad belongs next to something off the grill. Burgers, hot dogs, sausages, BBQ chicken — the toasted onion depth in the dressing connects to everything smoky and charred. Set it up as the anchor side and the rest of the plate fills in around it.
  • Pair it with coleslaw and corn on the cob for a complete cookout spread. The contrast between the creamy potato salad and the crunch of a good slaw is worth setting up intentionally.
  • For indoor meals, it works alongside fried chicken, pulled pork sandwiches, or a deli spread. Cold, it holds well for a few hours on a buffet table — keep it covered and refrigerated until you’re ready to set it out.
Storage & Reheating
  • Store in an airtight container in the refrigerator for up to four days. Stir before serving — the dressing may settle slightly as it sits but comes back together easily.
  • Do not freeze this potato salad. Mayonnaise-based dressings break when frozen and thawed, leaving a watery, separated texture that won’t recover.
  • Food safety: keep the potato salad refrigerated until you’re ready to serve it. Do not leave it at room temperature for more than two hours — one hour if the ambient temperature is above 90°F.

Frequently Asked Questions

Can I use a different potato?

Yes. Yukon Gold or red potatoes hold their shape better for a firmer bite. Russets give you a softer, creamier texture that absorbs the dressing well.

Is this recipe gluten-free?

Potatoes, mayo, eggs, and the other core ingredients are naturally gluten-free. Check the label on Kinder’s Onion Dips & Seasoning Mix to confirm it meets your standards.

Can I add pickles?

Yes. Diced dill pickles or relish add a briny contrast that works well against the toasted onion dressing. Start with 2–3 tablespoons and adjust from there.

Can I make this without eggs?

Yes. Omit the hard-boiled eggs for an egg-free version. The dressing and potatoes carry the salad on their own.

How far ahead can I make this?

Up to 24 hours. The flavor improves the longer the Kinder’s seasoning has to work through the dressing. Keep it covered in the refrigerator and stir before serving.
