Bacon-Wrapped Jalapeno Poppers with Kinder’s Tequila Lime

Most jalapeno poppers stop at cream cheese and bacon and call it done. These don’t.

Bacon renders and the pepper softens over the same heat, a bit of timing our grilling recipes get right.

The filling here is Kinder’s Tequila Lime Seasoning mixed into softened cream cheese, sharp cheddar, and panko breadcrumbs. That one move changes the entire character of the bite, bright citrus cutting through the richness of the cream cheese, tequila lime layering with the jalapeno heat instead of fighting it. The bacon goes on thin-cut, wraps tight, and goes into the smoker at 225°F for 1.5 to 2 hours until the exterior is evenly browned and the filling is bubbling at the edges.

The smoker is the move here. Low and slow at 225°F means the bacon renders fully, picks up smoke, and crisps without charring, the kind of result you can’t fake in an oven. That said, the oven works. 400°F, 25 to 30 minutes on a wire rack, and you get solid output: crispy bacon, molten filling, enough char on the pepper wall to count.

Gloves when you seed the jalapenos. Capsaicin oil doesn’t wash off quickly, and if you touch your face an hour later you’ll remember skipping this step. Thin-cut bacon only, thick-cut struggles to wrap and often won’t render through before the filling overcooks.

Prep takes 15 minutes. From there the smoker does the work. Eight jalapenos, 16 halves, enough for four as a standalone appetizer or more as part of a larger spread.

Flavor First.

Ingredients

  • 8 large jalapeno peppers, halved lengthwise with stems on, seeds removed
  • 4 oz cream cheese, softened
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup panko breadcrumbs
  • 16 strips bacon 1 strip per pepper half
  • Toothpicks for securing bacon
  • 1 tsp Kinder’s Tequila Lime Seasoning No Kinder’s? Use instead: Substitute with 1/2 tsp lime zest, 1/4 tsp chili powder, 1/4 tsp garlic powder, and a pinch of salt. — combined to replicate the blend

Equipment

  • Smoker or oven (preheated to 400 degrees F)
  • Mixing bowl
  • Spoon or piping bag for filling
  • Toothpicks
  • Wire rack or grill grate for the smoker
  • Parchment-lined baking sheet

Method

  1. Preheat the smoker to 225 degrees F. (For the oven method, preheat to 400 degrees F.)
  2. Microwave the softened cream cheese for 30 seconds to ensure it is easy to mix. In a bowl, combine the cream cheese, shredded cheddar, panko breadcrumbs, and Kinder’s Tequila Lime Seasoning. Mix thoroughly until smooth and uniform.
  3. Halve the jalapenos lengthwise, leaving the stems on. Remove seeds and membranes (wear gloves if sensitive to capsaicin). Pat the insides dry with a paper towel.
  4. Fill each jalapeno half with approximately 1 to 1.5 tablespoons of the cream cheese mixture, pressing gently to fill the entire cavity.
  5. Wrap one strip of bacon around each filled jalapeno half, overlapping slightly to cover the filling. Secure the ends of the bacon with toothpicks.
  6. Smoker method: Place the poppers directly on the smoker grate and cook for 1.5 to 2 hours at 225 degrees F until the bacon is evenly browned and the filling is bubbling.
  7. Oven method: Arrange poppers on a wire rack set over a parchment-lined baking sheet. Bake at 400 degrees F for 25 to 30 minutes until the bacon is browned and crispy.
  8. Remove toothpicks before serving. Serve warm with your preferred dipping sauce.

Notes

  • Gloves are non-negotiable — Capsaicin oil clings to skin for hours. Touch your eyes after seeding peppers without gloves and you’ll understand why this isn’t optional.
  • Thin-cut bacon only — Thick bacon won’t wrap tight and often won’t render fully in the cook window. Standard thin-cut wraps snug, crisps evenly, and adheres to the pepper wall.
  • Room-temperature cream cheese — Cold cream cheese tears and leaves gaps when you fill. Pull it out an hour before you start, or microwave for 30 seconds. Smooth fill, no air pockets.
  • Leave seeds for real heat — Removing all seeds makes these mild. Leave a few in if you want heat that stacks with the tequila lime flavor.
  • Use a piping bag — A zip-lock bag with one corner snipped fills the peppers faster and cleaner than a spoon. Worth the 10 seconds of setup when you’re doing 16 halves at once.
  • Make ahead — Fill and wrap up to 4 hours out, cover and refrigerate. Add 5 to 10 minutes to cook time if going straight from cold.
Serving Suggestions
  • Cold dipping sauce alongside hot poppers is the play. Sour cream, ranch, or a cilantro-lime crema all work — the cool tang cuts the bacon fat and resets the palate between bites. A cold lager, hard cider, or a margarita is the right drink here; the tequila lime filling makes the margarita the obvious call.
  • Pull the toothpicks before you plate. The filling stays extremely hot for several minutes off the heat — worth mentioning to anyone reaching for one immediately.
Storage & Reheating
  • Refrigerator: airtight container, up to 3 days. Reheat in the oven or air fryer at 375°F for 8 to 10 minutes — the bacon re-crisps and the filling heats through. Skip the microwave; it turns the bacon rubbery.
  • Freeze unbaked. Assemble the poppers, freeze flat on a sheet pan until solid, then transfer to a zip-lock bag. Good for up to 1 month. Cook from frozen in the oven at 400°F and add 15 to 20 minutes to the bake time.

Frequently Asked Questions

How long do bacon-wrapped jalapeno poppers take in the smoker?

1.5 to 2 hours at 225°F. You’re looking for bacon that’s evenly browned and a filling that’s visibly bubbling at the edges before you pull them.

Can I make bacon-wrapped jalapeno poppers in the oven instead of a smoker?

Yes. 400°F on a wire rack over a parchment-lined sheet pan, 25 to 30 minutes. The bacon crisps and the filling bubbles. You won’t get the smoke in the pepper wall, but the result holds up.

What can I substitute for Kinder’s Tequila Lime Seasoning?

Mix ½ tsp lime zest, ¼ tsp chili powder, ¼ tsp garlic powder, and a pinch of salt. It gets close, the brightness and citrus character are there, though Kinder’s has more depth.

How do I keep the cream cheese filling from leaking out?

Pat the inside of each pepper half completely dry before filling. Wet pepper walls break the seal between filling and pepper. Fill to the rim but not past it, and wrap the bacon so it overlaps the open face.

How spicy are these?

With all seeds removed, relatively mild. The jalapeno wall gives flavor and slow-building heat. Leave a few seeds in if you want heat that registers. Jalapeños vary, so some batches run hotter than others regardless.

Can I prep these ahead of time?

Yes, fill and wrap up to 4 hours before cooking. Cover and refrigerate. Pull them out when the smoker or oven is ready and add 5 to 10 minutes to cook time if going in cold.
