Mild BBQ Chicken Nachos

Nachos get written off as bar food. These are the version that makes people stop mid-conversation and reach for another chip.

Nachos promoted to dinner, with our weeknight dinner recipes page as the character witness.

Mild BBQ Chicken Nachos start with rotisserie chicken tossed in Kinder’s Mild BBQ Sauce, sweet, tangy, with just enough depth to carry the whole tray. Layer it twice on a sheet pan with colby jack, black beans, fire-roasted corn, and jalapeños, then bake at 400°F until the cheese is melted and the edges go golden. Done in 20 minutes.

The double-layer build is what separates a solid nacho from a disappointing one. One layer means the chips on top get all the toppings and the bottom chips get nothing. Two layers means every chip has a shot at coverage. It takes two extra minutes of setup and makes the whole tray noticeably better.

Kinder’s Mild BBQ Sauce does the work. It coats shredded rotisserie chicken evenly, finishes the nachos as a drizzle, and delivers a flavor that doesn’t need backup. The mild heat level means the heat you taste comes from the jalapeños you control, not from a sauce competing with the rest of the build.

Store-bought rotisserie chicken shreds fast, it’s already cooked, and it saves 30 minutes on a 20-minute recipe. That’s the move. Don’t complicate it.

Have the toppings ready before the nachos come out of the oven. Sour cream, guacamole, pico de gallo, fresh cilantro, set them out and let everyone build their own. These nachos don’t wait, and they shouldn’t have to.

Flavor First.

Ingredients

  • 1 cup Kinder’s Mild BBQ Sauce divided; No Kinder’s? Use instead: ½ cup ketchup, 2 Tbsp brown sugar, 1 Tbsp apple cider vinegar, 1 tsp Worcestershire sauce, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp smoked paprika, ¼ tsp black pepper — combined to replicate the blend
  • 3 cup rotisserie chicken, shredded
  • 1 large bag tortilla chips
  • 11/2 cup colby jack cheese, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup fire-roasted corn, drained
  • 2 jalapeños, sliced

Equipment

  • Large rimmed baking sheet
  • Large mixing bowl

Method

  1. Preheat oven to 400°F.
  2. Toss shredded chicken with half the Kinder’s Mild BBQ Sauce in a bowl until coated.
  3. Spread ¾ of the chips in an even layer on a large baking sheet.
  4. Layer evenly: BBQ chicken over chips, then half the shredded cheese, all the black beans and fire-roasted corn.
  5. Top with the remaining chips, then the rest of the cheese, and sliced jalapeños.
  6. Bake 8–10 minutes until cheese is melted and starting to bubble and brown at the edges.
  7. Remove from oven. Drizzle with the remaining Kinder’s Mild BBQ Sauce. Add any additional toppings you’d like — sour cream, guacamole, fresh cilantro. Serve immediately.

Notes

  • Layer twice — Spread ¾ of your chips first, then the BBQ chicken, then half the cheese, then beans and corn. Top with the remaining chips, the rest of the cheese, and jalapeños. Every chip gets coverage. That’s the whole technique.
  • Don’t pile it on — Even distribution over two layers beats one loaded pile. Too many toppings on a single layer means soggy chips before you’ve taken two bites.
  • Rotisserie chicken is the right call — It shreds in minutes, it’s already seasoned, and it’s fully cooked. A fresh-cooked chicken breast adds 30 minutes you don’t need here.
  • Serve the second it comes out — Nachos go soft fast. Have every topping ready — sour cream, guacamole, pico, cilantro — before the oven timer goes off. Oven to table, no stops.
  • Control the heat with the jalapeños — Kinder’s Mild BBQ Sauce keeps things dialed back. If you want more heat, add extra jalapeño slices, use pickled jalapeños for brightness, or finish with a drizzle of hot sauce. The mild base gives you room to build.
Serving Suggestions
  • Set out sour cream, guacamole, pico de gallo, and fresh cilantro before the nachos hit the table. A hot sauce or two on the side lets everyone dial in their own heat level. Cold beer or a margarita on ice is the natural pairing.
  • If you want to round it into a spread, a simple green salad or a cup of tortilla soup alongside keeps things from feeling one-note. These also hold well as the centerpiece of a game-day setup — double the recipe, use a full sheet pan, and have a second tray ready to go into the oven before the first one lands.
Storage & Reheating
  • Nachos are best eaten straight from the oven. Once they sit, the chips pull moisture from the toppings and go soft — that’s not a fixable problem, it’s just how nachos work.
  • If you have leftovers, reheat on a sheet pan at 375°F for 5–8 minutes. It re-crisps the chips somewhat. Microwave reheating makes chips limp — skip it.
  • The better move: store the BBQ chicken separately in an airtight container in the fridge for up to 3 days. When you want nachos again, rebuild fresh on a sheet pan. Takes 10 minutes and tastes like it just came out of the oven.

Frequently Asked Questions

Can I use a different cheese?

Pepper jack adds heat, sharp cheddar is classic, a Mexican blend works fine. Colby jack is the default because it melts smooth and mild, it doesn’t compete with the BBQ sauce. Use whatever you have.

Can I use canned chicken instead of rotisserie?

Yes. Drain it well, shred it, and toss it with Kinder’s Mild BBQ Sauce the same way. Rotisserie is the better call for texture and flavor, but canned chicken works on a tight timeline.

How do I make these spicier?

Swap Kinder’s Mild BBQ Sauce for Kinder’s Hot, add extra jalapeño slices, or drizzle with hot sauce right before serving. Pickled jalapeños added after baking add bright heat without baking the spice off.

Can I make these ahead of time?

Prep the components ahead, shred and sauce the chicken, drain the beans and corn, slice the jalapeños. Keep them separate in the fridge. Assemble and bake when you’re ready to serve. Built nachos don’t hold; the components do.

What chips work best?

A sturdy, thick-cut tortilla chip holds up under the toppings and the oven heat. Thin chips go soft before they reach the table. Standard restaurant-style or any thick-cut chip works well.
