Woodfired Garlic Steak Cheese Dip

Most cheese dips are forgotten before the bowl’s empty. This one gets asked about the next day.

A dip people ask about the next day, unusual company for our grilling recipes.

Woodfired Garlic Steak Cheese Dip builds from the ground up: grilled flank steak seasoned with Kinder’s Woodfired Garlic Seasoning, a three-cheese base of cream cheese, pepper jack, and Velveeta, fire-roasted tomatoes, caramelized onions, and jalapeños all melted into a single warm, cohesive sauce. The result has actual depth, smoky garlic threaded through every layer, steak in every scoop, a steady heat from the jalapeños that keeps each bite interesting.

Kinder’s Woodfired Garlic Seasoning drives this dip, and that’s on purpose. It seasons the flank steak before it hits the grill AND goes directly into the cheese sauce itself. That double application isn’t a shortcut, it’s how the dip reads as one cohesive thing instead of a cheese sauce with toppings dropped in. The smoky garlic flavor is built into the structure of the recipe, not added at the end.

The three-cheese combination is the other key decision. Cream cheese brings the body and smoothness. Pepper jack adds sharpness and a hint of heat. Velveeta is the melt insurance, it keeps the sauce stable and scoopable even as it cools. Together they create a sauce that stays creamy from the first chip to the last.

This makes 8 servings in 35 minutes. Prep is straightforward: dice the aromatics, melt the cheeses low and slow, grill the steak, combine. The technique that matters most is patience during the cheese melt. Medium-low heat and constant stirring keep the sauce smooth and cohesive. Rush it with high heat and it breaks, grainy and unrecoverable.

It works at any temperature between Game Day and a Tuesday night when you need something real.

Flavor First.

Ingredients

  • 1 lb flank steak
  • 2-3 tsp Kinder’s Woodfired Garlic Seasoning, plus more for the cheese sauce for the steak; No Kinder’s? Use instead: 1 tsp garlic powder, 1/2 tsp smoked paprika, 1/2 tsp onion powder, 1/2 tsp sea salt, 1/4 tsp black pepper — combined to replicate the blend
  • 1 medium onion, finely diced
  • 2-3 jalapeños, finely diced adjust for desired heat level
  • 8 oz cream cheese, cubed
  • 8 oz pepper jack cheese, cubed
  • 8 oz Velveeta cheese, cubed
  • 1/2 cup whole milk, plus more if needed for thinner consistency
  • 1 can fire-roasted diced tomatoes, drained 14.5 oz
  • Tortilla chips, for serving

Equipment

  • Grill or grill pan
  • Large cast-iron skillet or heavy-bottomed saucepan
  • Cutting board and chef’s knife
  • Instant-read thermometer
  • Wooden spoon or silicone spatula

Method

  1. Preheat grill to high heat. While it heats, finely dice the onion and jalapeños and set aside.
  2. In a large cast-iron skillet over medium heat, cook the diced onion and jalapeños, stirring frequently, until softened and lightly golden, about 4-5 minutes. Remove from skillet and set aside.
  3. In the same skillet, add cubed cream cheese, pepper jack cheese, Velveeta, and milk. Heat over medium-low heat, stirring constantly with a wooden spoon or spatula, until all the cheeses are fully melted and the sauce is smooth and creamy, about 6-8 minutes. Do not rush this with high heat — low and slow prevents the sauce from breaking.
  4. Stir the browned onion and jalapeño mixture back into the cheese sauce. Add drained fire-roasted tomatoes and 2-3 teaspoons of Kinder’s Woodfired Garlic Seasoning. Stir well and cook over low heat for 2 more minutes to meld the flavors. Taste and adjust seasoning.
  5. Season flank steak generously with additional Kinder’s Woodfired Garlic Seasoning on both sides. Grill for 4-5 minutes per side until medium-rare (internal temperature 130-135 degrees F). Remove from grill.
  6. Rest the steak for 5-10 minutes, then dice into bite-sized pieces.
  7. Mix half the diced steak into the warm cheese dip, folding gently to incorporate. Remove from heat and let rest for 5 minutes — the sauce will thicken slightly as it cools.
  8. Transfer to a serving dish or keep in the cast-iron skillet. Top with the remaining diced steak. Serve warm with tortilla chips for dipping.

Notes

  • Low and slow for the cheese — High heat causes the cheeses to separate and turn grainy. Keep it at medium-low and stir constantly. Six to eight minutes is the window; don’t rush it.
  • Drain the tomatoes completely — Press the drained tomatoes in a strainer before they go in. Excess liquid makes the dip watery, and you won’t get it back once it’s in the sauce.
  • Dial the heat with the jalapeños — Two jalapeños with seeds removed = mild. Three jalapeños with seeds = medium-hot. A pinch of cayenne at the end gives you another lever if you want more.
  • Keep it warm at the table — Serve directly in the cast-iron skillet on a trivet, or transfer to a slow cooker on the warm setting. The sauce thickens as it cools; warm keeps it at the right scooping consistency.
  • Thin it out if needed — If the dip thickens too much, stir in warm milk one tablespoon at a time until the texture is back. Don’t add cold milk — it can shock the sauce.
Serving Suggestions
  • Serve the dip in the cast-iron skillet at the center of a wide platter. Stack tortilla chips on one side, sliced baguette or corn tortillas on the other, and fill in with celery sticks and bell pepper strips for color and crunch. A bowl of fresh pico de gallo on the side cuts through the richness without competing with the flavor.
  • The dip also holds up beyond chips. Spoon it over baked potatoes or nachos, or load it into a flour tortilla with the extra diced steak for a quick steak-and-cheese-dip burrito. It pairs well anywhere you’d use a heavy queso — just with more going on.
Storage & Reheating
  • Refrigerator: Store in an airtight container for up to 3 days.
  • Reheat on the stovetop over low heat, stirring frequently. Add warm milk a splash at a time to bring the consistency back — the sauce re-emulsifies with gentle heat. Microwave works in a pinch: 30-second intervals, stir between each, add milk if too thick.
  • Do not freeze. The cheese sauce separates after freezing and thawing — the texture doesn’t recover.

Frequently Asked Questions

What is Woodfired Garlic Steak Cheese Dip?

A grilled-steak cheese dip built with cream cheese, pepper jack, and Velveeta, seasoned throughout with Kinder’s Woodfired Garlic Seasoning. Real diced steak is folded into the sauce, it’s a hearty, scoopable dip with steak in every scoop, not just flavored queso.

What cut of steak works best for this recipe?

Flank steak is the right call, it grills fast, slices clean, and holds up in the dip without getting stringy. Skirt steak works as a substitute if that’s what you have on hand.

Can I make this without a grill?

Yes. A cast-iron grill pan over high heat on the stovetop gets the sear you need. Use high heat and don’t move the steak, you want a real crust before it goes into the dip.

Can I make Woodfired Garlic Steak Cheese Dip ahead of time?

Make the cheese sauce and the grilled steak separately up to a day in advance. Refrigerate them separately, then combine and reheat over low heat when you’re ready to serve.

How do I keep the cheese sauce from turning grainy?

Keep the heat at medium-low the entire time and stir constantly. If the sauce starts to break, pull it off the heat immediately and stir in a tablespoon of milk, it usually comes back together.

What should I serve with this steak cheese dip?

Tortilla chips are the default. Sliced baguette, corn tortillas, celery sticks, and bell pepper strips all work. Fresh pico de gallo on the side adds brightness against the richness of the cheese sauce.
