Honey Hot Chicken Lollipops

Honey hot chicken lollipops bring the kind of heat that keeps you reaching back in. Each drumstick gets reshaped, meat pushed down to create a compact, juicy dome around the exposed bone, so every piece is a self-contained, hand-held bite with a clean bone handle. Kinder’s Butcher’s All Purpose Seasoning goes on first, coating every surface. Then, in the final minutes on the grill, Kinder’s Honey Hot BBQ Sauce caramelizes into a sticky, sweet-heat glaze that hits hard and stays with you.

Reshaping the drumstick is knife work rather than grill work, and it changes everything after it. More of that in our grilling recipes.

The most presentation-forward build in our chicken wings recipes set; the shape alone earns it a different slot on a party table.

The lollipop shape is the move. The exposed bone becomes a natural handle, the meat cooks evenly on all sides, and the whole thing is built for grabbing without plates or utensils. This is the kind of thing that disappears fast at any cookout, game day spread, or backyard setup where the food needs to show up with something to say.

After prep, the grill takes it from there. You’re working with two zones, indirect heat to cook the lollipops through over about 35 minutes, then a baste and caramelize stage in the last 5–7. Total time is just over an hour including prep. Worth every minute.

Before you start: use a sharp boning or paring knife. The knuckle cut needs to go all the way to the bone in one clean pass. Once the cut is made, firm pressure is what pushes the meat down, the tendons release with force, not finesse. Work through all 12 pieces and the rest is grill time.

Flavor First.

Ingredients

  • 12 chicken drumsticks
  • 3 tbsp Kinder’s Butcher’s All Purpose Seasoning No Kinder’s? Use instead: bold all-purpose or BBQ seasoning — combined to replicate the blend
  • 8 tbsp Kinder’s Honey Hot BBQ Sauce plus extra for dipping; No Kinder’s? Use instead: honey-hot wing or BBQ sauce — combined to replicate the blend

Equipment

  • Gas or charcoal grill
  • Sharp knife
  • Basting brush
  • Meat thermometer
  • Tongs

Method

  1. Prep the grill: Set up your grill with both a direct heat zone and an indirect heat zone.
  2. Rinse and dry: Rinse drumsticks under cold water and pat completely dry with paper towels.
  3. Create the lollipop shape: Using a sharp knife, cut all the way around the bone at the knuckle end of each drumstick, cutting down to the bone. Remove the small piece of chicken and skin by pulling it over the knuckle. Then, holding the knuckle end, use your other hand to push and pull the chicken meat down toward the thick end of the drumstick, exposing about 2 inches of clean bone. Repeat with all 12 drumsticks.
  4. Season: Season the shaped lollipop chicken legs evenly on all sides with Kinder’s Butcher’s All Purpose Seasoning.
  5. Grill upright on indirect heat: Place the lollipops meat-side down on the indirect heat zone. Stand them upright so the exposed bone points straight up (this is the classic lollipop presentation). Close the grill lid and cook for 35 minutes, or until the internal temperature reaches 160°F.
  6. Baste: Brush each lollipop evenly with Kinder’s Honey Hot BBQ Sauce.
  7. Caramelize: Cook for an additional 5–7 minutes, until the internal temperature reaches 165°F and the sauce caramelizes and becomes sticky.
  8. Serve: Remove from grill and serve immediately with extra Kinder’s Honey Hot BBQ Sauce on the side for dipping.

Notes

  • Use a sharp boning knife — The knuckle cut needs to go all the way to the bone in one clean motion. A dull knife drags, tears the skin, and makes the lollipop shape harder to hold.
  • Push with conviction — After the knuckle cut, use firm downward pressure to push the meat toward the thick end. The tendons and skin resist — that’s expected. Work each piece fully before moving to the next.
  • Stand them bone-up on indirect heat — The upright position keeps the meat cooking evenly from all sides and holds the sauce below the bone, so the handle stays clean and easy to grip.
  • Baste only in the final 5–7 minutes — Kinder’s Honey Hot BBQ Sauce has enough sugar to burn fast. Add it too early and you get char. Add it at the end and you get the sticky, caramelized finish.
  • Pull at 165°F internal — Use a meat thermometer. The indirect heat stage brings the lollipops to 160°F; the glaze stage finishes them to 165°F. Don’t guess on chicken.
  • Always serve extra sauce for dipping — The glaze on the lollipop is the base layer. Extra Kinder’s Honey Hot on the side is what pulls the whole thing together at the table.
Serving Suggestions
  • Stand them upright in the center of a platter — bone handles pointing up, sauce bowl in the middle. They serve themselves from there.
  • For a full BBQ plate, pair with cold slaw, pickled jalapeños or quick-pickled red onion, and cornbread. The acidity cuts through the sweet-heat glaze cleanly.
  • For a cookout spread, grilled corn on the cob and crispy potato wedges round it out without competing. Keep the sides simple — the lollipops are the focus.
  • Twelve lollipops handles about 4 people as an appetizer. Double the batch if the spread needs to go further. These go fast.
Storage & Reheating
  • Refrigerate leftover lollipops in an airtight container for up to 3 days. The glaze holds well in the fridge without getting tacky.
  • To reheat, use a 375°F oven for 10–12 minutes until warmed through and the sauce re-caramelizes. An air fryer at 375°F for 6–8 minutes works even better — it crisps the exterior back up. Either way, brush a light coat of extra Kinder’s Honey Hot BBQ Sauce on after reheating to refresh the glaze.

Frequently Asked Questions

What does a “lollipop” cut mean for chicken drumsticks?

The lollipop cut pushes all the meat down toward the thick end of the drumstick, leaving about 2 inches of clean bone as a handle. The meat forms a compact dome at the bottom. Cleaner to eat, better looking on a platter, and easier to dip than a standard drumstick.

Is the lollipop shaping step really necessary?

Not for flavor, unshaped drumsticks grilled with the same seasoning and sauce taste good. But the lollipop shape is the whole point: a built-in bone handle, even cooking from all sides, and a platter presentation that stands on its own. Those 20 minutes of prep pay off at the table.

Can I make honey hot chicken lollipops in the oven?

Yes. Place lollipops bone-up on a wire rack over a baking sheet. Bake at 400°F for 35–40 minutes until the internal temperature reaches 160°F. Brush with Kinder’s Honey Hot BBQ Sauce and bake another 5–7 minutes until the sauce caramelizes.

How spicy is Kinder’s Honey Hot BBQ Sauce?

Medium heat with a strong honey sweetness that tempers the spice. The heat builds gradually rather than hitting immediately. For more kick, add cayenne to the Kinder’s Butcher’s All Purpose Seasoning before coating. For less, cut the sauce with a drizzle of straight honey.

How do you keep the sauce from burning on the grill?

Baste only in the final 5–7 minutes, after the internal temperature is near 160°F. Adding sauce earlier exposes the sugars to prolonged heat, which burns rather than caramelizes. Keep the lollipops on indirect heat during the glaze stage, not over direct flame.

Can I prep honey hot chicken lollipops ahead of time?

Shape and season the lollipops up to 24 hours in advance. Refrigerate uncovered on a rack, the dry air firms the skin and helps the seasoning adhere. Grill to order, or fully cook and reheat in a 375°F oven or air fryer before serving.
