Carne Asada Tex Mex Meatballs

Carne asada tex mex meatballs start with one decision that changes everything: Spanglish Asadero Carne Asada Seasoning goes into the meat, not just on the surface. Built around citrus, chili, and garlic, it seasons ground beef from the inside out, mix it in with shredded Mexican blend cheese, panko, seeded jalapeño, and garlic, and every bite carries that flavor all the way through.

Meatballs carrying carne asada seasoning is a swap with no business working as well as it does. Belongs with the beef collection.

The method is sear-then-simmer. Brown the meatballs in a hot skillet, a hard, real sear, then pull them, build a chipotle tomato sauce in the same pan, and return them to finish. Ten minutes covered. A layer of melted cheese. Done in 40 minutes.

Inside the meatball mix: shredded Mexican blend cheese creates pockets of melt, seeded jalapeño adds heat without domination, and panko keeps the texture light enough not to turn dense. The egg binds it all without making the mix heavy.

The chipotle adobo carries the sauce. Smoky, deep, and just sharp enough to cut the richness of the beef, it’s not background heat, it’s the point. Crushed tomatoes keep it loose and saucy.

Over rice or with warm tortillas, this is a full plate. It holds for meal prep and reheats clean, the sauce keeps the meatballs from drying out. Make a double batch and you’re covered for the week.

Spanglish Asadero Carne Asada Seasoning is worth keeping in the pantry. There’s a sub blend in the ingredients if you’re working with what you have, but once this dish lands, you’ll want the real thing.

Flavor First.

  • 1 cup Mexican blend cheese, shredded for topping

Equipment

  • Oven
  • Baking sheet or roasting pan
  • Instant-read thermometer

Method

  1. Prep: Preheat oven to 400°F if finishing in oven (optional).
  2. In a large bowl, combine ground beef, Spanglish Asadero Carne Asada Seasoning, 1 cup shredded Mexican blend cheese, panko bread crumbs, chopped parsley, minced garlic, diced jalapeño, and egg. Mix until evenly combined.
  3. Form mixture into golf ball-sized meatballs and place on a platter.

Notes

  • Use the full seasoning amount — Spanglish Asadero Carne Asada Seasoning goes into the meat, not just on the surface. It needs full volume to season from the inside out. Don’t dial it back.
  • Don’t overwork the meat — Mix just until evenly combined. Overworking ground beef builds protein bonds that tighten during cooking and produce a dense, tough meatball. Stop the moment it comes together.
  • Sear in a single layer — Meatballs need space to brown. Crowd the pan and they steam instead of sear. If your skillet isn’t large enough, brown in two batches — it’s worth the extra time.
  • Don’t rush the simmer — The 10-minute covered simmer is when the meatballs absorb the sauce and finish cooking through. Pull them early and the interior is underdone. Keep the heat at medium-low.
  • Check with a thermometer — Ground beef needs to hit 160°F. The sear-and-simmer combination gets you there, but verify on the first batch. Color alone isn’t reliable.
  • Watch the cheese melt — Two minutes covered is all it takes. Pull the lid the moment the cheese is melted and pulling. Go longer and you get rubbery instead of glossy.
Serving Suggestions
  • Over rice is the default — white rice, cilantro-lime rice, or Spanish rice all work. The sauce is loose enough to absorb into the grain without going soupy.
  • Warm flour or corn tortillas turn this into a taco setup. Two to three meatballs per tortilla, a spoon of chipotle tomato sauce, diced white onion, fresh cilantro, and a squeeze of lime. That’s the plate right there.
  • For a full spread: roasted corn or charred vegetables on the side, a wedge of avocado, and pickled jalapeños if you want extra heat. The sauce is already assertive, so the sides don’t need to do heavy lifting.
Storage & Reheating
  • Refrigerate in an airtight container for up to 3 days. The sauce keeps the meatballs from drying out, so they hold better than most meatball recipes.
  • Reheat in a skillet over medium-low heat with a splash of water or broth — this loosens the sauce and brings everything back to temperature without overcooking the beef. Microwave works covered on medium power, not high. Skip the high-heat shortcuts.
  • Fresh garnishes — cilantro, lime, diced onion — go on after reheating, not before.

Frequently Asked Questions

Can I use a different seasoning if I don’t have Spanglish Asadero Carne Asada Seasoning?

Yes. The sub blend is in the ingredients section: chili powder, garlic powder, cumin, oregano, salt, pepper, cayenne, and lime. It replicates the core flavor profile well enough to run the recipe. Spanglish Asadero has more depth, but the sub gets you close.

What size should the meatballs be?

Golf ball-sized, about 1.5 to 2 inches in diameter. Too small and they overcook during the simmer; too large and the inside needs more time than the sauce gives it. Consistent sizing matters for even cooking.

Can I make these ahead?

Yes. Form and refrigerate the raw meatballs up to 24 hours before cooking, cover tightly. You can also cook the full recipe, refrigerate, and reheat per the storage notes above.

Can I make this in an air fryer?

You can air-fry the meatballs instead of searing, 375°F for 12–14 minutes, shaking halfway. You’d still need to build the chipotle tomato sauce on the stovetop and finish the simmer there. More steps, not fewer.

Can I cook this from frozen?

Thaw completely before cooking. Frozen beef cooks unevenly, the outside can overcook before the center hits 160°F. Thaw overnight in the refrigerator, or under cold running water for 30–60 minutes if you’re short on time.

Can I use a different protein?

Ground turkey or ground pork both work. Turkey produces a lighter meatball that absorbs the chipotle sauce well; pork adds fat and richness. Adjust salt slightly, both proteins need a touch more seasoning than beef.
