Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic salt
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/3 cup diced red onion
  • 1/2 cup balsamic vinegar
  • 1 tbsp honey
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced
  • 1/3 cup fresh basil, sliced

Equipment

  • Cast iron skillet
  • Paper towels
  • Tongs
  • Knife
  • Cutting board
  • Foil
  • Spoon

Method

  1. Pat chicken breasts dry with paper towels.
  2. Season both sides generously with garlic salt and let rest at room temperature for 10 minutes.
  3. Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
  4. Sear chicken breasts for 4-5 minutes on the first side until golden and crispy.
  5. Flip and sear the other side for 4-5 minutes more until internal temperature reaches 165°F.
  6. Remove chicken to a clean plate and tent loosely with foil to keep warm.
  7. In the same skillet, reduce heat to medium and add minced garlic and diced red onion.
  8. Sauté until the onion is translucent and fragrant, about 2-3 minutes.
  9. Carefully add balsamic vinegar and honey, stirring to combine.
  10. Simmer for 3-4 minutes, allowing the balsamic to reduce and thicken slightly.
  11. Return the chicken to the skillet and nestle it into the sauce.
  12. Top each chicken breast with a slice of fresh mozzarella.
  13. Cover the skillet and cook for 3-5 minutes until the mozzarella is completely melted.
  14. Arrange on serving plates and top with cherry tomatoes and fresh basil slices.
  15. Drizzle any remaining sauce from the pan over each plate and serve immediately.

Notes

  • Use a cast iron skillet for the best sear and even heating throughout cooking.
  • Don’t move the chicken around too much while searing—let it develop a golden crust for flavor.
  • Fresh mozzarella melts faster than other cheeses, so watch it closely.
  • Make the balsamic reduction ahead of time and reheat it when you’re ready to serve.
  • Add a splash of balsamic at the end of cooking for a bright, acidic finish.
Serving Suggestions
  • Serve over creamy polenta, pasta, or with roasted vegetables and crusty bread.
  • Pair with a dry white wine like Pinot Grigio or a light Italian red.
Storage & Reheating
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently over medium heat to avoid drying out the chicken.

Can I use chicken thighs instead?

Yes! Bone-in thighs take longer, plan for 20-25 minutes to reach 165°F internal temp.

What if I don’t have fresh mozzarella?

Fresh mozzarella is the star here, but burrata or even a thin slice of provolone can work in a pinch.

Can I make this ahead?

Prep the sauce and chop your toppings ahead. Cook the chicken fresh for best texture and food safety.
