Chicken is the weeknight default, which is exactly why most chicken recipes are boring. It is forgiving enough that you can cook it badly and still eat it, and that low bar is where the trouble starts. Everything on this page assumes the opposite: that chicken rewards attention more than almost anything else you cook, because the margin between dry and juicy is about four minutes and one decision. Thighs or breasts, skin on or off, hot and fast or low and gentle. Get those right and chicken stops being the thing you default to and becomes the thing you plan for.
Grilled & skewered
Direct heat, bold rubs, and the char that makes chicken worth eating outside.

Greek Blend Chicken Skewers with Cucumber Salad
Skewers are the fastest lane on the grill, and this one arrives with its own side. Cut the pieces evenly or the small ones dry out while the big ones catch up.

Grilled Chicken Fajita Skewers
Fajita seasoning applied to chicken and peppers on the same stick, which solves the problem of vegetables falling through the grate. Char the peppers harder than feels right.

Chipotle Mango Crunch Grilled Chicken Thighs
Sweet, smoky, and a little sharp, over thighs that can take the heat. The sugar in the glaze wants the cooler side of the grill or it burns before the middle is done.
Skillet & oven
Indoor chicken, where crust is the whole objective and a thermometer earns its keep.

Lemon Pepper Chicken with Garlic Parmesan Sauce
Thighs dredged and seared hard until the skin is deep gold, then finished in a pan sauce built from what stuck to the bottom. Do not move the chicken early; the crust releases when it is ready.

Baked Caesar Parmesan Chicken
Caesar dressing reassigned as a baking sauce, blanketed in Romano and Parmesan. It goes on thick and bakes into a crust rather than sliding off.

One-Pan Autumn Roasted Chicken and Veggies
A soggy sheet pan is a heat problem, not an ingredient problem. High oven, uncrowded pan, and a broil finish separate roasted from steamed.
Bowls, salads & handhelds
Where leftover chicken goes, and where a fast dinner usually ends up.

Grilled Chipotle Lime Chicken Bowl
Grilled chicken over rice with everything else layered around it. Built to be assembled ahead and eaten cold, warm, or straight from the fridge.

Grilled Teriyaki Chicken Salad
The lighter end of the grill: real char, no heavy plate. The teriyaki does double duty as marinade and dressing base.

Citrus & Garlic Chicken Tacos
Chicken marinated in citrus and garlic, seared hot, folded into warm tortillas. The marinade is the whole personality; let it work while you prep the toppings.
The Chicken Rules
Three rules carry most of this page. Season further ahead than feels necessary, because salt needs time to travel and a rub applied at the counter is a rub sitting on the surface. Cook to temperature, not to time, and pull chicken a few degrees early since it keeps climbing off the heat. And treat thighs as the default rather than the compromise: they hold moisture through mistakes, take high heat without seizing, and carry bold seasoning better than breast ever will. Breast has its place, and it is usually pounded thin and cooked fast.

Frequently Asked Questions
Should I use chicken thighs or chicken breasts?
Thighs for almost everything on this page. They carry more fat, which means they stay juicy through the mistakes that ruin breast, and they take high heat and bold seasoning without turning stringy. Breasts are worth it when you want a lean, fast cook: pound them to an even thickness, season heavily, and sear hot rather than baking them slowly. The even thickness matters more than the cut.
What temperature is chicken actually done at?
165°F is the safe number, but pull it earlier than that. Carryover heat keeps cooking the meat after it leaves the pan, so taking breasts off around 158°F and thighs around 170°F lands them right after resting. Thighs are more forgiving on the upper end; they stay pleasant well past 175°F, which is why they suit the grill.
How far ahead should I season chicken?
Further ahead than most recipes suggest. Salt needs time to move into the meat, so 40 minutes is a real improvement over 5, and overnight in the fridge is better still for thighs and whole birds. If you are short on time, season and let it sit while the pan or grill preheats. A rub applied and cooked immediately is seasoning on the surface, not through the meat.
Why does my grilled chicken burn before it cooks through?
Sugar in the rub or sauce, almost always. It caramelizes long before the interior comes up to temperature. Hold the sweet component back, cook over the cooler side of a two-zone fire until the chicken is close to done, then move it over direct heat and sauce it in the last few minutes. Skin-on pieces also want a dry surface going on, so pat them down first.
