Skirt Steak Pinwheels with Kinder’s The Greek Blend Seasoning

These are called Carnivore Cinnabons for a reason. Look at the cross-section of a finished pinwheel, pesto-green, cured prosciutto, pulled provolone, all layered and rolled into a tight spiral, and the name makes sense immediately.

Pinwheels hold together on toothpicks and nothing else, so pack the filling tighter than seems necessary. One of the odder shapes in the steak lineup.

Here’s how they come together. Skirt steaks get pounded flat, then layered with pesto, prosciutto, and provolone. Season the inside with Kinder’s The Greek Blend before the fillings go down. Roll tight, skewer, slice into individual pinwheels. The Greek Blend’s oregano and garlic pull everything toward the Mediterranean, it works with the pesto and prosciutto in a way that feels built, not thrown together.

On the grill, these run a two-zone setup, direct heat for the sear, indirect to finish. Target 120–125°F internal for medium-rare. Flip the pinwheels once or twice during the indirect phase to keep the cheese inside. Don’t skip that step.

Active cook time is about 35 minutes. Add 15 minutes of rest after the grill, the filling holds heat and the juices need time to settle, and you’re at the table in under an hour.

Kinder’s The Greek Blend carries the flavor here, oregano, garlic, herbs, so the balance is already figured out. It goes on both the inside and outside of the pinwheels, which means the seasoning runs through every bite, not just the crust.

Serve them once and you’ll be explaining the technique to everyone at the table.

Flavor First.

Ingredients

  • 3 skirt steaks
  • 4 tbsp Kinder’s The Greek Blend Seasoning, divided No Kinder’s? Use instead: a mix of dried oregano, garlic powder, onion powder, dried thyme, lemon zest, black pepper, and a pinch of salt — combined to replicate the blend
  • 4 tbsp pesto sauce
  • 10 slice prosciutto
  • 10 slice provolone cheese
  • 6 wooden skewers, soaked in water for at least 15 minutes

Equipment

  • Gas or charcoal grill set up for direct and indirect high heat
  • Wooden skewers
  • Cutting board, sharp knife, and meat mallet or rolling pin
  • Plastic wrap or butcher paper for pounding
  • Tongs
  • Instant-read meat thermometer

Method

  1. Fire up the grill to high heat with both direct and indirect cooking zones (about 400 degrees F).
  2. Soak wooden skewers in water for at least 15 minutes so they do not burn on the grill.
  3. Trim any excess fat from the skirt steaks. Lay each steak flat on a cutting board and cover with plastic wrap or butcher paper. Pound and flatten the steaks as thin and even as possible using a meat mallet or rolling pin.
  4. Season the inner side of each pounded steak with half of the Kinder’s The Greek Blend Seasoning.
  5. Spread pesto sauce evenly over each steak. Layer with prosciutto slices, then provolone cheese.
  6. Roll each steak up tightly lengthwise into a log shape. Insert a skewer through each side of the rolled log, about 1 inch from each end. Slice down the center between the two skewers to form two individual pinwheels. Trim the exposed skewer ends — but do not cut too short or the pinwheel will unravel. Repeat with the remaining steaks.
  7. Lay each pinwheel flat and season the outside with the remaining Kinder’s The Greek Blend Seasoning.
  8. Place the pinwheels on the direct heat side of the grill. Sear for 2-3 minutes until a crust forms, then flip and sear the other side for 2-3 minutes. Once both sides are crusted, move to the indirect heat side.
  9. Close the grill lid and cook for an additional 10-15 minutes until the internal temperature reaches 120-125 degrees F for medium-rare. Flip once or twice to prevent the cheese from melting and dripping away.
  10. Remove from the grill and rest for 15 minutes before serving. Serve with your favorite sides.

Notes

  • Pound thin, pound even — The thinner and more uniform the steak, the tighter the roll and the more evenly the pinwheel cooks. Take the time here.
  • Don’t cut those skewers short — The skewer needs to extend at least an inch past each edge of the pinwheel. Too short and the roll unravels on the grill.
  • Season both layers — Half the Greek Blend goes on the inside before the fillings go down. The other half goes on the outside right before grilling. That’s how the seasoning runs through every bite.
  • Watch the cheese on indirect heat — Provolone will start to move during the finish. Flip the pinwheels once or twice on the indirect side to keep the cheese inside the roll where it belongs.
  • Rest for the full 15 minutes — The filling holds a lot of heat. Cut too early and the juices run. Wait, and everything stays where it should.
Serving Suggestions
  • Pair these with a Greek salad and roasted potatoes — the bright acid and the starchy base both hold up against the rich filling.
  • Tzatziki on the side is the right call. It cuts through the fat from the provolone and prosciutto and picks up the herb notes from the Greek Blend. Grilled pita and hummus turn the plate into a full spread.
  • For a finishing touch, a thin drizzle of balsamic glaze over the pinwheels adds a sweet-acidic counterpoint against the savory crust. Orzo tossed with olive oil and lemon works as a base if you want something more substantial.
Storage & Reheating
  • Refrigerator: Store cooked pinwheels in an airtight container for up to 3 days.
  • To reheat, use the oven at 300°F for 10–12 minutes. Low and slow — high heat overcooks the steak fast. A covered skillet over medium-low heat works too: 3–4 minutes per side.
  • These hold up cold. Slice them thin the next day and serve at room temperature — the flavors come through just as cleanly.

Frequently Asked Questions

What internal temperature should I target for skirt steak pinwheels?

Pull at 120–125°F for medium-rare. Skirt steak is thin and residual heat will carry the temp up a few degrees during the rest. If you prefer medium, pull at 130°F.

Can I use a different cheese?

Yes, fontina, mozzarella, or Havarti all melt well inside the roll. Provolone is the right call for flavor: mild enough to let the pesto and Greek Blend carry the dish, and it melts without getting greasy.

What if my pinwheels unravel on the grill?

Make sure the skewers extend at least an inch past each edge and start with the cut face down on direct heat to sear the filling into place. A tighter roll before skewering helps too.

Can I make these ahead of time?

Yes, roll, skewer, and slice up to 24 hours ahead. Keep them covered and refrigerated. Season the outside right before they go on the grill.

Can I make these on a grill pan or cast iron instead?

Yes. Get the pan rip-hot over high heat, sear each cut face for 2–3 minutes, then lower the heat and cover to finish. You won’t get the same smoke, but the sear and the filling do the work.
