Here’s the move most people skip at the grill: two-zone setup.

Two-zone setup is the step most people skip, and the one our chicken wings recipes insist on.

Wings hit direct heat first, medium-high flame, lid up, flipping every few minutes, until the skin crisps and picks up real color. Then they move to the indirect side, lid down, to finish cooking through without burning. Skipping that indirect phase is exactly why most grilled wings come off the grate charred outside and undercooked inside. The two-zone method fixes both problems at once.

Once the wings read 165°F internal, the sauce goes on. Kinder’s Honey Hot BBQ Sauce in two thin coats, one to start the set, one to finish the lacquer. A few minutes per coat, lid closed. That’s when the skin transitions from crispy to sticky-crispy, the sugars in the sauce caramelize against the residual grill heat, and the whole thing clicks.

The base is Kinder’s Woodfired Garlic Seasoning. Coat the wings in olive oil, season generously, and let them rest 15 minutes before the grates. The seasoning, woodfired garlic, smoke, a clean savory backbone, builds into the skin rather than sitting on top of it. When the Honey Hot BBQ Sauce goes on, it has something real to work with.

Pat the wings completely dry before the oil and seasoning. Moisture is the enemy of crispy skin and it’s the step that decides how the grill phase goes.

Three pounds of wings. Budget an hour start to finish, the instructions run longer than the At-a-Glance suggests. Serves four as a main or six to eight as part of a bigger spread alongside sliders and chips.

Set up right, these are the wings that go first and don’t come back to the table.

Flavor First.

Ingredients

  • 3 lb party chicken wings drums and flats
  • 2-3 tbsp Kinder’s Woodfired Garlic Seasoning No Kinder’s? Use instead: 1 teaspoon roasted garlic powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon onion powder, 1/4 teaspoon black pepper, and a pinch of kosher salt — combined to replicate the blend
  • 2 tbsp olive oil
  • 2 cup Kinder’s Honey Hot BBQ Sauce for basting and dipping; No Kinder’s? Use instead: 1/2 cup of your favorite hot sauce, 1/4 cup honey, 1/4 cup ketchup, 1 tablespoon apple cider vinegar, and a pinch of garlic powder — combined to replicate the blend

Equipment

  • Gas or charcoal grill with a lid
  • Tongs
  • Basting brush
  • Instant-read meat thermometer
  • Large bowl for marinating
  • Serving platter

Method

  1. Pat the wings dry with paper towels. Toss chicken wings in olive oil and season generously with Kinder’s Woodfired Garlic Seasoning until evenly coated. Cover and refrigerate for 15 minutes. Remove from the refrigerator and allow to come to room temperature before grilling.
  2. Preheat your grill for a two-zone setup: medium-high direct heat (400-450 degrees F) on one side and indirect heat (no flame) on the other.
  3. Place chicken wings over direct heat. Move frequently and grill for 10-15 minutes, flipping every 3-5 minutes, until the wings are browned and the skin starts to crisp.
  4. Move wings to the indirect heat side. Close the grill lid and cook for an additional 15-20 minutes, or until the wings reach an internal temperature of 165 degrees F.
  5. Baste wings generously with Kinder’s Honey Hot BBQ Sauce. Close the grill lid and cook for 2-3 minutes. Apply a second coat of sauce and cook for another 1-2 minutes until the sauce is caramelized and sticky. Remove from grill once the internal temperature reaches 170 degrees F.
  6. Let wings rest for 10 minutes before serving with extra Kinder’s Honey Hot BBQ Sauce on the side for dipping.

Notes

  • Dry the wings before everything — Paper towel them until there’s no visible surface moisture. Wet skin steams instead of crisps, and no amount of grill time will recover it after the fact.
  • Don’t rush the indirect phase — Move the wings to the indirect side as soon as the skin browns and crisps. They need 15 to 20 minutes over indirect heat to cook through completely. Trying to finish them over direct flame scorches the surface before the center reaches temperature.
  • Two coats, not one — A single heavy pour of sauce drips off and flares up on the grill. Two thin coats let each layer set against the hot skin before the next goes on. The second coat goes on right before you pull them and gives you the lacquered finish.
  • Use a thermometer — Pull the wings to the indirect side at 165°F for saucing, then let them hit 170°F before they come off the grill. Skin color and meat pullback from the bone are useful secondary signals, but the probe is the actual call.
  • Charcoal over gas if you have the option — The woodfired garlic in Kinder’s seasoning reads differently over live coals. You get an extra smoke layer that ties the whole flavor profile together. Gas works well, but charcoal is the upgrade.
Serving Suggestions
  • Set out the wings on a wide platter with small bowls of Kinder’s Honey Hot BBQ Sauce and ranch or blue cheese dressing on the side. Celery and carrot sticks alongside give people something to work with between rounds and keep the spread from going heavy.
  • For a full tailgate setup, add sliders, chips, or corn on the cob to fill the table. The wings anchor the spread — everything else supports them. A foil sheet under the wings on the platter keeps the sauce contained and makes cleanup easier when the game is running.
  • One finishing move worth doing: a squeeze of fresh lime juice over the wings right before they hit the table. It cuts through the sweetness of the Honey Hot BBQ Sauce and gives the woodfired garlic a brighter, sharper read.
Storage & Reheating
  • Store leftover wings in an airtight container in the refrigerator for up to 3 days. Let them cool uncovered for the first 20 to 30 minutes so the steam escapes before you seal them — it keeps the skin from turning fully soft.
  • To reheat: oven or air fryer. Oven: wire rack over a baking sheet at 400°F for 10 to 12 minutes. Air fryer: 375°F for 5 to 6 minutes. Both methods bring the skin back. The microwave will soften it — use it only if time is the constraint.
  • These wings don’t freeze well once sauced. If you want to prep ahead for a bigger event, freeze the seasoned wings before grilling and thaw overnight in the refrigerator before cooking.

Frequently Asked Questions

Can I use a different Kinder’s sauce for basting?

Absolutely, Kinder’s Mild BBQ Sauce, Kinder’s Roasted Garlic BBQ Sauce, or Kinder’s Buttery Buffalo Sauce all work. Use whatever matches your crowd’s heat preference.

How do I know when the wings are done without a thermometer?

Look for deeply golden skin with a visible crisp, and the meat pulling back from the drumette bone. That combination usually means the wings are near temperature. The most reliable check is still a probe at the thickest part, 165°F to cook through, 170°F before coming off.

Can I prep these ahead for a tailgate?

Season the wings up to 24 hours ahead and store covered in the refrigerator. Grill them on-site, or cook at home and transport in a covered foil pan. Reheat uncovered at 375°F for 8 to 10 minutes to bring the skin back before serving.

Can I make these in the oven if I don’t have a grill?

Bake the seasoned wings on a wire rack over a sheet pan at 425°F for 35 to 40 minutes, flipping once halfway through. Brush on the sauce in the last 5 minutes and broil for 2 minutes to set the lacquer. You lose the grill char, but the two-coat sauce technique still works.

What makes the two-zone grill setup worth using for chicken wings?

Direct heat crisps the skin. Indirect heat cooks the meat through without burning the outside. Wings are small, high heat alone finishes the surface before the interior is safe to eat. The two-zone method gives you control over both stages. It’s the difference between wings that are crispy and cooked through versus wings that are burnt on the outside and still pink at the bone.
