Kinder’s Flank Steak Salad

Most steak salads are an afterthought, a few cold strips of beef over wilted greens. The Kinder’s Flank Steak Salad is the opposite. Thinly sliced flank steak with a deep, roasted-garlic crust, sautéed bell peppers and red onion cooked in the same pan, black beans, and shredded Monterey Jack, this bowl eats like a meal, not a side dish.

Flank sliced thin over greens is the lightest end of what beef can be, and it still needs a proper sear. The lighter corner of the steak recipes.

The foundation is Kinder’s Woodfired Garlic Seasoning. It’s a blend of roasted garlic and subtle wood smoke that builds a proper crust on the sear, not just surface coating. Marinate the steak for at least an hour before it hits the pan and that seasoning works into the meat. When the steak lands on a screaming-hot cast iron, you get a char that holds up against everything else in the bowl.

The technique is direct: sear hot, rest long, slice against the grain. Flank steak is tender at medium-rare, it slices clean, and the fat carries the Woodfired Garlic flavor all the way through. Push it past medium and the texture suffers. Pull at 135°F, rest for ten minutes, then cut.

While the steak rests, bell peppers and red onion go into the same pan. The fond from the sear seasons the vegetables without any extra work, they pick up that roasted-garlic depth in under ten minutes.

Assembly is straightforward: romaine, sautéed peppers and onion, black beans, Monterey Jack, sliced steak on top. Lime over everything. Add avocado or pico de gallo for more texture. Warm tortillas on the side turn it into steak fajita bowls.

Active cook is 20 minutes once the steak is marinated. This is a weeknight recipe that shows up with conviction.

Flavor First.

Ingredients

  • 1.5 lbs flank steak
  • 3 tsp Kinder’s Woodfired Garlic Seasoning No Kinder’s? Use instead: Substitute with 1 tsp garlic powder, 1/2 tsp smoked paprika, and 1/2 tsp salt per teaspoon. — combined to replicate the blend
  • 3 tbsp olive oil, divided
  • 1 head romaine lettuce, washed and chopped
  • 2 bell peppers, deseeded and sliced any color
  • 1 small red onion, thinly sliced
  • 2 cup black beans, drained and rinsed
  • 1 cup Monterey Jack cheese, shredded
  • 1 lime, cut into wedges optional
  • 1 cup salad dressing of choice optional

Equipment

  • Large skillet or cast iron pan
  • Tongs
  • Instant-read thermometer
  • Cutting board and sharp knife

Method

  1. Season flank steak generously on both sides with Kinder’s Woodfired Garlic Seasoning. Wrap and refrigerate for at least 1 hour to allow the seasoning to penetrate the meat.
  2. Remove steak from the refrigerator 20-30 minutes before cooking to bring it closer to room temperature.
  3. Heat 1.5 Tbsp olive oil in a large skillet or cast-iron pan over high heat until shimmering and just beginning to smoke.
  4. Add the steak and sear for 3-4 minutes on the first side without moving it. Flip and cook 4-5 more minutes until desired doneness: 125 degrees F = rare, 135 degrees F = medium-rare, 145 degrees F = medium.
  5. Remove steak to a cutting board and rest for at least 10 minutes.
  6. While the steak rests, reduce heat to medium. Add the remaining 1.5 Tbsp olive oil to the same skillet. Add sliced red onion and bell peppers and saute for 7-8 minutes, stirring occasionally, until softened and lightly charred.
  7. Slice the rested steak thinly against the grain into strips.
  8. Assemble salad bowls with chopped romaine, sauteed peppers and onions, black beans, and shredded Monterey Jack. Top with sliced steak and a squeeze of lime juice or your preferred dressing.

Notes

  • Marinate for real — 30 minutes moves the needle, but 1 hour is where the Woodfired Garlic Seasoning actually penetrates the meat. Overnight (up to 24 hours) is the best option if you plan ahead.
  • Pan has to be screaming hot — Let the oil shimmer and just begin to smoke before the steak goes in. A cold or warm pan gives you a gray exterior instead of a crust.
  • Always cut against the grain — Flank steak has long, visible muscle fibers running in one direction. Cut perpendicular to them and each bite is tender. Cut with them and it’s chewy.
  • Use the same pan for the vegetables — The browned bits left from searing the steak season the peppers and onions directly. Don’t wipe the pan.
  • Pull at 135°F — Medium-rare to medium is the range for flank steak. Past medium, it gets tough and stays tough. A thermometer removes the guesswork.
Serving Suggestions
  • Build the bowls and serve immediately — romaine on the bottom, sautéed peppers and onions, black beans, Monterey Jack, then sliced steak across the top. Squeeze lime over each bowl before it hits the table.
  • For a Tex-Mex build, add sliced avocado, pico de gallo, and a dollop of sour cream. Warm tortillas on the side turn this into steak fajita bowls with almost no extra effort.
  • Dress with a simple lime-cilantro vinaigrette or a creamy jalapeño dressing if you want more body. The steak seasoning holds up to bold dressings.
Storage & Reheating
  • Store all components separately in airtight containers — steak, sautéed vegetables, beans, and greens each in their own container. Assembled bowls get soggy fast.
  • Sliced steak keeps in the refrigerator for up to 4 days. Reheat in a skillet over medium heat for 1-2 minutes, or serve cold straight from the fridge over fresh romaine for a quick next-day salad.
  • The sautéed peppers and onions reheat well. The romaine does not — always use fresh greens when assembling leftovers.

Frequently Asked Questions

Can I grill the flank steak instead of pan-searing?

Yes, and the grill is a great match for the Woodfired Garlic Seasoning. Cook over high heat for 4-5 minutes per side and use a thermometer, the same temperature targets apply.

What does ‘against the grain’ mean?

The muscle fibers in flank steak run visibly in one direction. Slice perpendicular to those fibers and you shorten them, making each bite significantly more tender. Slice with them and the steak is chewy.

Can I use a different cut?

Skirt steak, flat iron, and sirloin all work with this recipe. Adjust cook time based on thickness and check temperature the same way.

Can I use canned black beans?

Yes. Drain and rinse thoroughly, then use directly. If you want warm beans, heat briefly in a small saucepan with a pinch of salt and cumin.

How long should I marinate the steak?

At least 30 minutes moves the flavor, but 1 hour is where the Woodfired Garlic Seasoning makes a real difference. Overnight gives you the deepest penetration.

What dressing works best with this salad?

A simple lime-cilantro vinaigrette keeps it clean and bright. A creamy jalapeño or avocado-lime dressing adds richness. The steak seasoning is assertive enough that you don’t need much.
