Brown Sugar Bacon BLT

Brown Sugar Bacon BLT
The BLT is one of the best sandwiches in existence. Bacon, tomato, lettuce on toasted bread, the formula doesn’t need saving. This version just makes the most important part better.
A sandwich built for people eating standing up, which is most of what our game day recipes are for.
Kinder’s Brown Sugar Rub goes directly onto raw bacon slices before they hit a 375°F oven. The sugars caramelize against the fat, building a lacquered, slightly sticky crust that’s smoky and sweet without tipping into candy. Cooking the bacon on a cooling rack set over the baking sheet is the move, heat circulates underneath so both sides crisp evenly without a single flip.
Sourdough is the right bread here. The tang pushes back against the fat and the ranch BBQ sauce in a way plain sandwich bread won’t. Toast it until it’s genuinely golden, not just warm, you need that structure so the sandwich holds its shape when you cut diagonally.
The ranch BBQ sauce is two ingredients: BBQ sauce and ranch dressing, stirred together. It takes 30 seconds. It sounds too simple, and then you taste it against the caramelized bacon and you understand, creamy, tangy, smoky, just rich enough to anchor the whole sandwich without taking it over.
This makes four sandwiches in 35 minutes. Prep is minimal, you’re rubbing bacon and mixing a two-ingredient sauce, and the technique isn’t complicated. Crispy fried onions or avocado are solid additions if you want to push it further. They add without crowding.
Pair with french fries or a cold lager. Cut diagonally and serve immediately while the toast still has its crunch.

Notes
- Use a cooling rack inside the baking sheet — heat circulates on all sides so both surfaces crisp evenly without flipping once.
- Pat tomato slices dry — press both sides with a paper towel before layering. Watery tomato softens toast fast; this keeps the sandwich tight through the last bite.
- Make the ranch BBQ sauce ahead — it keeps in the refrigerator for up to 5 days and works on burgers, wings, and grilled vegetables. Make extra.
- Toast last, assemble immediately — bread that sits cools and softens. Build the sandwich while the toast is still hot.
- Cut diagonally and serve right away — the diagonal cut exposes the layers cleanly; immediate service means the toast is still doing its job.
- No Kinder’s? — mix 1/4 cup brown sugar with 2 tsp chili powder for a close approximation of the sweet-heat profile.
- French fries are the natural match here — salty crunch against sweet-smoky bacon works every time. Thick-cut sweet potato fries land in the same territory with a bit more sweetness.
- For a lighter plate, a simple green salad with a sharp vinaigrette cuts through the richness of the bacon and ranch BBQ sauce without fighting the sandwich.
- Serving a group? Cut each sandwich into quarters and arrange on a board with pickles and chips. No extra work, and it holds well for a casual spread.
- This sandwich is best eaten right after assembly. Once the sauce hits the toast, the bread softens quickly — there’s no practical way to store it assembled.
- Leftover bacon keeps in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5 minutes to restore the crisp. The microwave works in a pinch but softens the crust.
- The ranch BBQ sauce stores separately in the refrigerator for up to 5 days. Toast bread fresh and assemble to order.

What does Kinder’s Brown Sugar Rub do to the bacon?
It coats the bacon in a blend of brown sugar and spices that caramelize in the oven heat. The result is a lacquered, slightly sticky crust, smoky and lightly sweet, that plain salted bacon doesn’t come close to.
Can I use a different bread?
Yes. Sourdough works best because the tang balances the sweetness of the bacon and the ranch BBQ sauce, but whole wheat, rye, or ciabatta all hold up well. Pick something sturdy enough to not fall apart when you slice it.
How do I keep the tomato from making the sandwich soggy?
Slice about 1/4-inch thick and pat both sides dry with a paper towel before layering. A firm-ripe tomato releases less moisture and slices cleaner than an overripe one.
Can I skip the BBQ sauce?
Ranch alone works fine. Or use mayo, aioli, or sriracha mayo. The bacon carries the flavor, the sauce just needs enough body to bind the sandwich together.
How do I know when the bacon is done?
After 20–25 minutes at 375°F, look for deep amber color and bacon that feels set when you press it with tongs. It crisps further as it cools on the paper towels, pull it when it looks almost done, not when it looks perfect.
