Ingredients
  

Fish
  • 1 lb mahi mahi fillets or other white fish
  • 1 packet Spanglish Asadero Taco Seasoning No Spanglish Asadero? Use instead: 1 tsp chili powder, ½ tsp garlic powder, ½ tsp cumin, ¼ tsp onion powder, ¼ tsp smoked paprika, ¼ tsp salt, ¼ tsp black pepper — combined to replicate the blend
  • 2 tbsp olive oil for frying
Mango Salsa
  • 1 mango, diced
  • 1 cup red bell pepper, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup red onion, diced
  • 1/2 lime, juiced
  • 1 tbsp olive oil
Assembly
  • 1 cup red cabbage, thinly sliced
  • 1 cup green cabbage, thinly sliced
  • 8 corn tortillas

Method
 

  1. Prep: Rinse mahi mahi fillets under cold water and pat dry with paper towels.
  2. Make mango salsa: In a bowl, combine diced mango, red bell pepper, chopped cilantro, diced red onion, lime juice, and 1 tbsp olive oil. Mix gently, cover, and refrigerate until ready to serve.
  3. Season both sides of each mahi mahi fillet generously with Spanglish Asadero Taco Seasoning.
  4. Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering.
  5. Place fillets in the skillet. Cook 3-4 minutes per side until golden brown and fish flakes easily with a fork.
  6. Remove fillets to a paper towel-lined plate to drain excess oil.
  7. Warm corn tortillas in a dry skillet over medium heat, 30-60 seconds per side until soft and lightly charred.
  8. Place one mahi mahi fillet in each warmed tortilla.
  9. Top with sliced red cabbage, sliced green cabbage, and a spoonful of mango salsa.
  10. Serve immediately with extra lime wedges.

Notes

  • Get the pan hot before the fish goes in — Oil should be shimmering and nearly smoking. Mahi mahi releases moisture fast; a cold pan means steam, not sear. You want a crust in 3–4 minutes, not a poached fillet.
  • Season with the full packet — Spanglish Asadero Taco Seasoning is built to season through the flesh, not just coat the surface. Going light means under-flavored throughout.
  • Don't flip early — The fish releases from the pan naturally when the crust is set. If it sticks, it's not ready yet. Give it another 30 seconds and try again.
  • Make the mango salsa first — Even 10–15 minutes in the fridge helps the flavors converge. The lime juice softens the onion and brightens the mango. It's better cold than room-temp.
  • Pat the mahi mahi completely dry before seasoning — Surface moisture fights the sear. Paper towels, both sides, before the seasoning goes on.
  • Warm tortillas over open flame if you have a gas burner — 15–20 seconds per side directly on the grate gives you char and flex that a dry skillet can't quite match. Watch them — they go from perfect to scorched fast.
Serving Suggestions
  • Serve immediately — mahi mahi doesn't improve with time once plated. Put everything out separately and let people build: fish on the tortilla, two-cabbage slaw, mango salsa, lime wedge. That order keeps the tortilla from going soggy.
  • For a fuller plate, add Mexican rice and black beans on the side. Both hold while the fish cooks and neither adds more than 10 minutes of prep. Sliced avocado works if you want to round out the fat.
  • Set it up as a taco station if you're feeding a group — fish in a warm pan, salsa in a bowl, cabbage on the side. The recipe handles the flavor; the presentation handles itself.
Storage & Reheating
  • Store the fish and salsa separately in airtight containers. The mahi mahi keeps refrigerated for up to 2 days; reheat in a skillet over medium heat with a splash of water or broth. Never high heat — it tightens the protein and fades the seasoning. The mango salsa holds for up to 3 days and actually improves overnight as the flavors meld.
