- No smoker? Oven at 225°F works identically—same times/temps.

- Pat it bone dry before seasoning — any surface moisture turns to steam under heat and blocks the bark from forming. Paper towels first, season immediately after.
- Press the seasoning in — don't dust it on. Barbacoa Seasoning works when it's in contact with the meat, not just sitting on top. Use your hands and press firmly across the whole surface.
- Use a probe thermometer, not a timer — smoke time varies by roast size and smoker. The 60–90 min range is a reference point. Pull at 115–120°F; that's the actual cue.
- Get the sear station ripping hot before the meat touches it — grill at 450–500°F or cast iron over high. The sear window is 2–3 minutes per side. A cool surface burns that window.
