Chicken
  • 4 boneless, skinless chicken breasts
  • 6 oz. beer any light lager or pilsner works well
  • 2 tbsp. low-sodium soy sauce
  • 1/2 tsp. black pepper
  • 2 garlic cloves, peeled and minced
  • 2 tbsp. extra virgin olive oil
Salad
  • 5-6 cup fresh spring lettuce mix or baby greens
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped pecans, lightly toasted
  • 1/2 cup crumbled feta cheese
Balsamic Vinaigrette
  • 2 tbsp. raw honey
  • 1 tbsp. Dijon mustard
  • 1/2 tsp. sea salt
  • 1/2 tsp. freshly ground black pepper
  • 1 garlic clove, peeled and minced
  • 1/4 cup aged balsamic vinegar
  • 3/4 cup extra virgin olive oil

Equipment

  • Mixing bowls
  • Large bowl or resealable freezer bag for marinating
  • Whisk
  • Large skillet
  • Meat thermometer
  • Cutting board
  • Sharp knife
  • Tongs or spatula
  • Salad plates

Method

  1. In a mixing bowl, combine 6 oz. of beer, 2 tbsp. soy sauce, 1/2 tsp. black pepper, and 2 minced garlic cloves to create the marinade.
  2. Place the chicken breasts in a large bowl or resealable freezer bag and pour the garlic marinade evenly over them.
  3. Gently rub the marinade into the chicken meat to ensure even coverage and flavor distribution.
  4. Seal the bowl or bag and refrigerate for 1 hour to allow the flavors to penetrate the chicken.
  5. Remove the chicken from the refrigerator approximately 20 minutes before cooking to allow it to reach closer to room temperature.
  6. Heat 2 tbsp. olive oil in a large skillet over medium-high heat until shimmering.
  7. Add the marinated chicken breasts to the hot skillet, being careful of splattering oil.
  8. Cook the chicken for 4-5 minutes on the first side without moving it, allowing a golden crust to develop.
  9. Flip the chicken carefully and cook for another 4-5 minutes on the second side.
  10. Check the internal temperature using a meat thermometer inserted into the thickest part of the chicken - it should read 165°F.
  11. Remove the cooked chicken from the skillet and transfer to a cutting board.
  12. Let the chicken rest for 5 minutes, then slice into strips approximately 1/2-inch thick.
  13. While the chicken cooks, prepare the balsamic vinaigrette by whisking together honey, Dijon mustard, salt, pepper, and 1 minced garlic clove in a small bowl.
  14. Add 1/4 cup balsamic vinegar to the mixture and whisk thoroughly to combine.
  15. Slowly drizzle in 3/4 cup extra virgin olive oil while whisking constantly to create an emulsified vinaigrette.
  16. Taste the vinaigrette and adjust seasoning as needed.
  17. Place the fresh spring lettuce mix into a large mixing bowl.
  18. Add half of the blueberries, raspberries, and crumbled feta cheese to the lettuce.
  19. Drizzle with the desired amount of balsamic vinaigrette and toss gently until all greens are lightly coated.
  20. Divide the dressed salad evenly among chilled salad plates.
  21. Top each salad with sliced chicken and garnish with remaining berries, feta cheese, sliced red onion, and toasted pecans.
  22. Serve immediately on chilled plates for an elegant presentation.

Notes

  • Marinate overnight — One hour works. Overnight is better. The beer-soy marinade penetrates much deeper in 8–12 hours. Pull the chicken 20 minutes before you cook so it doesn't go straight from the refrigerator to the pan.
  • Don't move the chicken — Once it hits the skillet, leave it alone for the full four to five minutes. Lifting it early tears the crust. It releases cleanly when it's ready.
  • Toast the pecans ahead — Dry skillet, medium heat, two to three minutes. Shake the pan constantly. Pull them at the first smell of toasted nut — they go from perfect to burnt faster than you expect.
  • Make the vinaigrette a day before — It holds in a sealed jar in the refrigerator for up to two days. Let it come to room temperature for 10 minutes before dressing, or the cold oil won't coat evenly. Shake or re-whisk after storing.
  • Chill the plates — Ten minutes in the freezer before plating keeps the salad cold from the first bite to the last.
  • Dress the greens right before plating — Dressed greens wilt within minutes. Keep the vinaigrette, greens, and proteins all separate until the moment you plate.
Serving Suggestions
  • This salad works as a standalone main — the chicken brings enough protein and the pecans and feta add enough weight that you don't need a side.
  • If you want to round it out, crusty whole-grain bread or warm focaccia gives you something to drag through the leftover vinaigrette at the bottom of the plate.
  • For wine, a crisp Sauvignon Blanc or unoaked Chardonnay holds up against the balsamic without competing with the berries. Sparkling water with lemon keeps the palate clean if you're going non-alcoholic.
  • This is a strong entertaining dish — most of the work happens ahead of time. Marinate the chicken the night before, make the vinaigrette that morning, and assembly is ten minutes when guests arrive.
Storage & Reheating
  • Keep the components separate. Sliced chicken in an airtight container in the refrigerator — good for up to three days. Vinaigrette in a sealed jar — up to one week. Do not store dressed greens; they wilt within the hour.
  • When you're ready for leftovers, let the chicken sit at room temperature for 10 minutes before building the salad. Cold chicken straight from the refrigerator kills the texture of the whole plate. The vinaigrette may separate; shake or whisk it back together before using.
  • Fresh berries don't hold well after they've been handled. If you have extras from assembly, store them separately and scatter them fresh when you rebuild the salad.
