Ingredients

  • 8–12 slices provolone cheese
  • 8–12 slices deli ham
  • 8–12 slices salami
  • 8–12 slices pepperoni
  • 1/2–3/4 cup sliced pepperoncini or banana peppers, drained
  • 1/2 medium red onion, thinly sliced
  • 2–3 cups romaine lettuce, roughly torn
  • 1/4–1/3 cup mayonnaise
  • 2–3 Tbsp red wine vinegar
  • 2–3 Tbsp Kinder's The Blend Seasoning, divided No Kinder’s? Use instead: 1 tsp garlic salt, ½ tsp onion powder, ½ tsp black pepper, ¼ tsp celery salt — combined to replicate the blend
  • 4 Italian hoagie rolls or sub rolls, split lightly toast if desired

Equipment

  • Large cutting board
  • Sharp chef's knife

Method

  1. Set up your board: Use a large cutting board as your workspace. Have your sharp chef's knife ready.
  2. Layer and pile: Pile provolone, ham, salami, pepperoni, pepperoncini, red onion, and romaine lettuce in the center of the board.
  3. Season and dress: Drizzle mayonnaise in a generous squiggle over the pile. Splash red wine vinegar evenly. Season with 1½–2 Tbsp Kinder's The Blend.
  4. Chop: Using a rocking chopping motion, dice everything together into bite-sized pieces. Keep chopping and folding the mix — work your way across the board — until everything is uniformly small and well combined. The mayo and vinegar create a creamy dressing that binds the mix. Taste and adjust with more Kinder's The Blend, mayo, or vinegar as needed.
  5. Load the rolls: Scoop a heaping portion of the chopped mix into each split hoagie roll. Press gently to pack it in. Dust the top with an extra pinch of Kinder's The Blend.
  6. Serve: Close the rolls and enjoy immediately while everything is fresh and crunchy. Cut in half for easier eating.

Notes

  • Chop fine and keep going — The instinct is to stop when things look chopped. Keep the knife moving until every piece is small enough that a single scoop has everything in it. Uniform size means uniform flavor in every bite.
  • Dress while you chop — Add the mayo and vinegar before the final passes of the knife, not after. The blade works the dressing into the mix as you cut, coating every piece instead of letting it pool at the bottom.
  • Toast the roll — A lightly toasted hoagie holds up against the dressed filling without going soggy. Cut-side down in a 350°F oven for 1–2 minutes. Skip it if you're eating immediately and moving fast.
  • Balance as you go — Start with less mayo and vinegar than you think you need, taste after the first chop pass, and adjust from there. Too rich? A splash more vinegar. Too wet? A little more mayo to bind. You want the mix creamy and cohesive, not soupy.
  • Serve immediately — Romaine wilts quickly once dressed, and the bread absorbs liquid fast. Build the sandwich and eat it. This is not a make-ahead situation once the rolls are loaded.
  • Customize the protein — Capicola, turkey, or roast beef can swap in or supplement the mix. Keep at least two Italian deli meats in the pile to hold onto the briny, cured-meat backbone that makes the filling work.
Serving Suggestions
  • Salt and vinegar chips are the call alongside this sandwich — the sharp acidity doubles down on the red wine vinegar in the chop and the crunch holds up next to the filling's texture. A simple green salad with Italian dressing keeps the meal light without competing.
  • For a party spread, cut each sandwich into thirds and arrange on a board. The cross-section of the filling — the colorful mix of meats, cheese, and greens — holds up well for grazing. Set out a small bowl of extra pepperoncini on the side for people who want more brine.
  • Soup pairs naturally here too. A bowl of tomato or minestrone alongside turns the sandwich into a complete meal with minimal extra work.
Storage & Reheating
  • The chopped mix (without bread) keeps in an airtight container in the fridge for up to 1 day. Stir before using — it will settle and release some liquid. Taste and adjust the seasoning with a pinch more Kinder's The Blend before loading into fresh rolls.
  • Do not store assembled sandwiches. The lettuce wilts, the bread absorbs the dressing, and the texture is gone fast. Always build fresh from the stored mix.
  • If you're prepping ahead for a group, hold the mayo, vinegar, and romaine until 10–15 minutes before serving. Chop all the meats, cheese, pepperoncini, and red onion together ahead of time and refrigerate covered. Dress and fold in the lettuce at the last minute, then load the rolls.
