Ingredients

  • 2 lb beef flap meat or skirt steak
  • 4 tbsp Spanglish Asadero Carne Asada Seasoning No Spanglish Asadero? Use instead: 1 tsp chili powder, ½ tsp garlic powder, ½ tsp cumin, ¼ tsp dried oregano, ¼ tsp salt, ¼ tsp black pepper, pinch of cayenne, squeeze of fresh lime — combined to replicate the blend
  • 2 tbsp olive oil
  • 4 bolillo rolls, sliced lengthwise
  • 2 cup Oaxaca cheese, shredded
  • Your favorite torta toppings

Equipment

  • Grill
  • Instant-read thermometer
  • Tongs
  • Serving platter

Method

  1. Prep: Cut beef into bite-size pieces.
  2. Heat olive oil on medium-high heat on flat top grill.
  3. Spread beef in a single layer. Season generously with Spanglish Asadero Carne Asada Seasoning.
  4. Cook and stir 6-8 minutes until no pink remains. Push meat to cooler side of grill.
  5. Place bolillo rolls face down on hot grill where meat cooked. Next to each roll, place a handful of shredded Oaxaca cheese.
  6. Move each roll on top of the cheese pile and press down slightly. Cook 2-3 minutes until cheese begins to brown and melt.
  7. Build tortas with generous portion of carne asada and your favorite toppings.
  8. Serve immediately.

Notes

  • Pat the beef dry before seasoning — surface moisture turns to steam on contact with a hot surface. You lose the sear, the crust, the color. A dry surface browns fast.
  • Use the full amount of Spanglish Asadero Carne Asada Seasoning — it seasons from the inside out, not just the surface. Under-season here and you taste the difference in every bite.
  • Get the surface fully hot before the beef goes in — medium-high with olive oil, let it rip before anything hits the flat-top. A warm surface steams the beef instead of searing it.
  • Single layer, no crowding — spread the beef out. Crowding drops the surface temperature and you're back to steaming. Work in batches if you're scaling up.
  • Let the Oaxaca brown, not just melt — the cheese pile needs 2 to 3 minutes on the hot surface to brown at the edges. That browned crust adds texture and anchors the cheese to the bread. Pull too early and you miss it.
  • Build and serve immediately — bolillo rolls lose structure fast once the meat and toppings go on. Build right when the cheese is ready and eat hot.
Serving Suggestions
  • Carne asada beef tortas are the plate. If you're rounding out the meal, Mexican-style rice and charros beans — or black beans with a squeeze of lime — sit cleanly alongside. For a summer cookout setup, grilled corn or elote works well.
  • For toppings, keep them sharp and fresh: cilantro, diced white onion, sliced avocado or guacamole, pickled red onions, crema, pickled jalapeños. Anything with acid or heat echoes the Spanglish Asadero's citrus-forward profile and keeps the flavors clean. Avoid heavy, creamy additions that dull the seasoning.
  • Serve straight off the grill. This dish doesn't hold.
Storage & Reheating
  • Store leftover carne asada beef — not assembled tortas — in an airtight container in the refrigerator for up to 3 days. Keep the rolls separate; assembled tortas go soft fast.
  • Reheat the beef in a skillet over medium heat with a splash of water or broth, covered, just long enough to warm through. High heat overcooks the protein and fades the seasoning. Microwave works — medium power, covered.
  • Toast fresh bolillo rolls when you reassemble. You can repeat the Oaxaca cheese step on a hot pan in 2 to 3 minutes.
