Method
- Preheat oven to 450 degrees.
- Spread tater tots in a single layer on a baking sheet.
- Season tater tots with 1 tbsp Kinder's Brown Sugar Rub.
- Bake tater tots 20-25 minutes or until golden brown. Pull and set aside.
- Lower oven temperature to 375°F. Line a large rimmed baking sheet with foil and place a large cooling rack on the foil.
- Arrange bacon in a single layer on the baking rack and coat evenly with the remaining 2 tbsp Kinder's Brown Sugar Rub.
- Bake until bacon is crisp, about 20-25 minutes. Transfer to paper towels to drain excess grease.
- In a skillet on medium-high heat, cook breakfast sausages for 12-16 minutes until cooked through and browned. Transfer to paper towels.
- Add eggs to the same skillet using the leftover grease. Season tops with salt and pepper. Cover the skillet with a tight lid or foil and cook 2-3 minutes until whites are fully set but yolks are still runny.
- Drop oven to 325°F and cut bacon and sausage into bite-size pieces.
- In a separate skillet, layer tater tots, bacon, sausage, and cheese. Place in the oven 4-8 minutes until cheese is melted.
- Remove from the oven and place eggs on top. Garnish with green onions and serve warm.

Notes
- Single layer on the tots — Crowding the pan traps steam and you get soft, pale tots instead of crispy ones. Use a large baking sheet and spread them out with no overlap.
- Elevate the bacon — A cooling rack over foil lets heat circulate under the strips and drains the fat as it renders. Skip the rack and the underside stays soft.
- Reuse the sausage grease — Don't wipe the skillet. Cook the eggs in whatever fat's left from the sausage. It seasons the eggs without any extra work.
- Cover the eggs tight — The steam trapped under the lid sets the whites without flipping. If your lid isn't snug, press a sheet of foil down at the edges.
- Prep ahead for faster mornings — Shred the cheese and dice the green onions the night before. The actual morning cook is mostly oven time.
- Stagger the oven stages — Start the tots at 450°F while you prep the bacon, then drop the temp and swap the pans. Cuts meaningful time off the total without sacrificing either component.
- Hot sauce or salsa on the side cuts through the richness of the cheddar and brown sugar bacon. Cholula, Tapatío, or a good green salsa all work without competing with what's already in the skillet.
- Fresh fruit alongside keeps the plate balanced. Berries, sliced melon, or citrus segments are all solid — they don't fight the savory flavors, they reset the palate between bites.
- Strong black coffee or fresh-squeezed orange juice. Neither needs elaboration.
- If you're feeding more than 4, this scales up cleanly. Use two baking sheets for the tots and a larger rack for the bacon. The skillet assembly handles double the quantity without any changes to technique.
- Store leftovers in airtight containers in the refrigerator for up to 3 days. Keep the components separate if possible — tots, meat, and eggs each in their own container — so the tots can be re-crisped without overcooking the eggs.
- Reheat the tots and meat on a baking sheet at 400°F for 8–10 minutes until crisped back up. Reheat eggs separately in a covered skillet over low heat, just until warmed through.
- Not recommended for freezing. Egg whites turn rubbery and the tots lose their texture on the thaw.
