Ingredients

  • 6 fresh croissants
  • 6 large eggs
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tbsp. unsalted butter
  • 6 slice sharp cheddar cheese
  • 8 oz. honey ham deli meat, sliced about 1/4-inch thick

Equipment

  • Baking sheet
  • Broiler or oven
  • Large non-stick skillet
  • Knife and cutting board
  • Spatula
  • Tongs
  • Fork or whisk

Method

  1. Preheat your oven to broil setting with the rack positioned 3-4 inches from the heat source.
  2. Split each croissant in half horizontally, trying to create even top and bottom halves.
  3. Place the croissant halves, cut-side up, on a baking sheet.
  4. Broil the croissants for 1-2 minutes, watching carefully, until just lightly golden and slightly crispy on the cut side. Don't let them brown too much or turn dark. Remove from oven.
  5. On the bottom half of each warm croissant, layer a generous amount of sliced honey ham, using 2-3 slices per sandwich.
  6. Top the ham on each sandwich with one slice of sharp cheddar cheese.
  7. Return the bottom halves (with ham and cheese) to the oven under the broiler for just 30 seconds to slightly warm the cheese, making it more receptive to the warm egg that will come next. Don't fully melt yet.
  8. While the croissants are finishing, melt the butter in a large non-stick skillet over medium heat.
  9. Once the butter is foaming, crack all 6 eggs into the skillet, being careful not to break the yolks.
  10. Cook the eggs to your preferred doneness, typically over-medium (yolk just set but still slightly soft). Season lightly with salt and pepper.
  11. Using a spatula, carefully slide each cooked egg onto the ham and cheese layer of a croissant bottom half.
  12. The residual heat from the egg and cheese will begin to melt everything together, creating a unified, delicious layer.
  13. Immediately top each sandwich with the croissant top half.
  14. Serve immediately while everything is still warm and the cheese is melted.

Notes

  • Fresh croissants over packaged — Bakery croissants have more layers and better butter distribution. That structure holds up under heat and doesn't compress when you bite in. Pre-packaged work in a pinch but the texture difference is real.
  • Toast the cut side, always — 90 seconds cut-side-up under the broiler builds a toasted barrier between the bread and the egg. Skip this and the yolk soaks straight through.
  • Over-medium, not over-easy — The yolk should be set enough to hold its shape when you transfer the egg to the sandwich. Still soft in the center with a slight wobble — not fully cooked. Pull it earlier than you think; carryover heat finishes the job.
  • Mise en place before the eggs hit the pan — Eggs are done in 3-4 minutes. Have the croissant bottoms toasted, ham layered, and cheese warmed before you crack the first one. You can't stop to assemble mid-cook.
  • Add-ons that work — A thin slice of ripe tomato, a handful of arugula, or a swipe of Dijon on the top half of the croissant before you close it. None are required. All of them work.
Serving Suggestions
  • Serve these immediately — the window where the cheese is melted and the croissant still has texture is short. Have everything else on the table before you start assembling.
  • For a weekend brunch spread, pair with fresh fruit and strong coffee. If you're feeding a group, work in two batches and hold the first round in a 250°F oven wrapped loosely in foil while you finish the eggs for round two. Don't hold them longer than 10 minutes or the croissant softens.
  • A simple arugula salad — lemon juice, olive oil, salt — cuts the richness well if you want something alongside. The sandwich is already substantial; skip heavy sides.
  • For breakfast on the go, wrap tightly in foil right after assembly. The steam keeps the cheese soft and the egg warm for 20-30 minutes in transit.
Storage & Reheating
  • Best eaten immediately while the cheese is still melted and the croissant has texture. If you have leftovers, wrap in foil and refrigerate for up to 24 hours.
  • Reheat wrapped in foil in a 300°F oven for 10 minutes. The croissant won't be as crisp as it started, but the egg will warm through without turning rubbery. Microwave works in 30-45 seconds if you need it fast — softer result, but the egg holds without becoming tough.
  • Don't freeze these. The egg texture changes when frozen and thawed, and the croissant goes from flaky to dense. Make them fresh.
