- Preheat your oven to 400°F.
- Season the chicken pieces with garlic salt and black pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat and cook the chicken for 8-10 minutes until golden and cooked through to 165°F. Remove from heat.
- Arrange the zucchini rounds in a single layer on a large baking sheet. Brush both sides lightly with the remaining olive oil.
- Bake the zucchini for 5 minutes until slightly tender but still holding their shape.
- Remove from the oven. Spoon about 1 tsp of BBQ sauce onto each zucchini round.
- Top each round with a small portion of chicken, a thin ring of red onion, and a pinch of mozzarella cheese.
- Return to the oven and bake uncovered for 10 minutes until the cheese is melted and lightly golden.
- Remove from the oven, scatter fresh cilantro over the top, and add a light drizzle of extra BBQ sauce. Serve warm.

- Even slices matter — Use a mandoline if you have one. Quarter-inch rounds bake evenly; uneven cuts mean some rounds go soft while others stay firm.
- Go light on the first sauce layer — One teaspoon of BBQ sauce per round before the second bake is the ceiling. More than that and the zucchini steams instead of holds. The second drizzle after baking is where the flavor punch comes from.
- Cheese swap — Mozzarella melts clean and mild. Cheddar or pepper jack pushes the flavor harder if you want more edge.
- Thin red onion rings — Slice the onion as thin as possible. Thick rings stay raw after 10 minutes in the oven and compete with the chicken. One thin ring per round is the right amount.
- Naturally low-carb and gluten-free — No substitutions needed. Works well for mixed-diet situations at parties without drawing attention to itself as a diet option.
- Extend the concept — Leftover baked zucchini rounds work as pizza-style bases. Swap the BBQ setup for marinara and whatever toppings you have on hand.
- Arrange the bites on a large platter with a small bowl of extra BBQ sauce in the center for dipping. That setup works at a party — the presentation is clean, the platter clears fast.
- For a lighter meal, pair with a simple green salad dressed with lemon vinaigrette. The acid cuts through the richness of the BBQ sauce and cheese without competing with either.
