- Prep the ribs: Remove the silver skin membrane from the bone side (grip with a paper towel for traction). Pat ribs dry. Season both sides generously with Kinder's The Blend. Let sit 15–30 minutes at room temp, or up to 4 hours in the fridge for deeper flavor.
- Fire up the smoker: Preheat to 225–250°F with hickory or applewood. Place ribs bone-side down on the grates. Smoke uncovered for 3 hours. Spritz with apple juice or water every hour if desired for moisture. You're looking for a deep reddish-brown color and the beginning of a smoke ring.
- Wrap it: Lay out double-layer heavy-duty foil. Place each rack meat-side down. Add optional brown sugar, butter pats, and apple juice. Wrap tight — you want steam trapped inside. Bump smoker to 250–275°F if possible and return ribs bone-side down. Smoke 2 more hours until bones start pulling back ¼–½ inch.
- Unwrap and sauce: Carefully open the foil (watch for steam). Place ribs meat-side up back on the smoker. Brush generously with Kinder's Hickory Brown Sugar BBQ Sauce. Smoke uncovered 30–60 minutes until the sauce sets up sticky and glossy.
- Final glaze: Apply another layer of sauce on both sides. Smoke 10–15 more minutes until the glaze is glossy, tacky, and caramelized. Internal temp should hit 195–203°F, or bend test: pick up with tongs at one end — slight crack but they don't fall apart.
- Rest and slice: Remove ribs and tent loosely with foil. Rest 10–15 minutes. Slice between bones. Serve hot with extra sauce on the side.

Pro Tips
• The 3-2-1 method (3 hrs smoke, 2 hrs wrap, 1 hr sauce) is your framework — baby back ribs run faster than St. Louis style, so adjust by 20–30 minutes as needed.
• Thin blue smoke is the goal. White billowing smoke makes your ribs taste like an ashtray. Keep it clean.
• Don't skip the wrap step. That's where the collagen breaks down and ribs go from good to great.
• Kinder's Hickory Brown Sugar sauce is already sweet — build your glaze in thin layers to avoid burning.
• Leftovers? Wrap in foil with a splash of sauce and reheat at 300°F for 20–25 minutes. Nearly as good the next day.
Serving Suggestions
Classic cookout plate: coleslaw, baked beans, and buttery grilled corn — everything you need for the full 4th of July spread. Slice and pile onto soft potato rolls with extra sauce for a killer rib sandwich that holds up to dipping. Lay the racks out on a big cutting board whole and let people slice their own — presentation that earns applause.
Storage & Reheating
Store leftovers wrapped in foil or in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months — vacuum seal if you can. Reheat in a 300°F oven wrapped in foil with a drizzle of extra sauce for 20–25 minutes until warmed through.
